Lamb chops with hummus and roasted tomatoes

What's a day without a nice recipe?


Check out this surprisingly simple and tasty recipe and discover the flavours of Mediterranean cuisine.

Lamb chops with hummus and roasted tomatoes.


You will need:

  • olive oil

  • garlic

  • cherry tomatoes

  • pine nuts

  • black olives

  • chickpeas

  • lemon juice

  • tahini

  • fresh mint

  • lamb chops

  • flatbread.


Preparation:

  1. Mix the oil and garlic together, then rub half of it over the lamb chops. Marinate well, then set aside to marinate. Preheat oven to 220C/200C.

  2. Arrange the tomatoes on a roasting tray, then pour the remaining oil mixture over them and season with the spices.

  3. Roast for 8-10 minutes until the tomatoes are soft and add the pine nuts for the last 2-3 minutes to toast.

  4. Make the hummus by blending all the ingredients together with 2-3 tablespoons of water until smooth.

  5. Heat a frying pan over medium-high heat and roast the lamb for 4-5 minutes on each side or until cooked to your preference. Hold the fatty side of the meat against the pan for 2-3 minutes until crispy. Cover and set aside for 5 minutes to rest.

  6. Spread the hummus on a plate or four plates, top with the tomatoes, olive oil, lamb and watercress. Top with olives, cedar nuts, feta and mint and serve with the flatbread.
